I will be using this PC for games such as: Warcraft III, Starcraft II, and World of Warcraft. As well as college courses.

The video card that I will be using is a GeForce 7900 GS...

I'm going to get my operating system straight from the provider(cheaper that way) and I haven't decided yet which to go with.

All criticism will be appreciated and taken with complete respect. Thanks for your help.

Looks like you put together a decent system that will play the games that you want. However, I'm not sure if that 7900gs will be sufficient for Starcraft II, given some of the trailers and seeing how detailed the graphics are + the fact that you can have so many units on your screen. But video cards are easily upgradeable so I don't think you'll have to worry about that until you experience Starcraft II with your rig.

Good luck.

How hard is it to install a new CPU?

Overall it looks good. I would note that the Telstar Junior case only has room for one extra fan (It comes with 2).

As far installing a CPU goes, it is not that difficult. You just have to be very carefull not to bend any of the pins, and you have to be very carefull about static electricity.
