    Looks good. However, keep in mind that Windows XP isn't Direct X 10 compatible. The 8800's shouldn't have a problem with XP, but once DX 10 comes out, I believe you'll need Vista. 
    Personally, I don't know why Microsoft didn't just stick with Window's XP 64 Bit. That's an awesome OS.
     
    Anyways... just keep in mind that you'll probably have to go to Vista once the new DX10 games start coming out.

    I'd go another 50 watts on the power supply. 750 should be fine, but in my experience a dual gpu setup works a little better with an 800watt PSU. SLI/Crossfire is POWER HUNGRY.

    DX10 is only compatible with vista... Only DX10 game I have played yet is Crysis. While the graphics are better, the performance is more choppy. DX9.0c is stable and compatible with all current games for now.

    Yeah Vista sucks. I have a duel boot PC. I only use Vista for Crysis and COD4.

    Also your system looks good... don't add any more mem if you plan on running XP. It will only recognize 3.75gb TOTAL. Including your GPU mem.
