Serious Sam: The First Encounter and Serious Sam: The Second Encounter does not support wide screen from the options menu, but that can be fixed! Partially, I am not sure about whether it actually gives the correct FOV...

Go to Your Serious Sam Folder in Program Files
Go to Scripts Folder.
Open PersistentSymbols.ini

Find the line, "persistent extern INDEX sam_iScreenSizeI=(INDEX)"
It will be followed by a number, that is your screen width.

Find the line, "persistent extern INDEX sam_iScreenSizeJ=(INDEX)"
It will be followed by a number, that is your screen height.

Change the numbers to match your screen height and width.

For example, if your resolution is 1280*800 - those two lines should read,
persistent extern INDEX sam_iScreenSizeI=(INDEX)1280;
persistent extern INDEX sam_iScreenSizeJ=(INDEX)800;

Edit: Don't forget the semicolon after the resolution, also make sure you have no extra spaces. :)
